Buttery pastry cases are filled with a mincemeat of raisins, sultanas and currants, Bramley apple, mixed peel and nibbed walnuts, spiked with brandy and sweet mixed spices. A soft almond frangipane is spooned over the top and scattered with flaked almonds, baking to a golden finish that is lighter and nuttier than a traditional pastry lid. Baked by Meg Rivers artisan bakery in the Cotswolds, the six pies are best warmed through and served with cream or brandy butter, and make a welcome change from the usual box on the Christmas table.
